Zimmerman’s Berry Farm
Raspberry Salad
Preheat oven to 400 degrees.
Crust:
3 cups crushed pretzels
3/4 cup melted butter
2 tsp. sugar
Spray 9”x13” baking dish with non-stick spray. Combine sugar and melted butter and coat crushed pretzels. Spread evenly in bottom of baking dish. Bake for 7 minutes and cool completely.
Filling:
8 oz cream cheese-softened
1 cup sugar
12 oz thawed cool whip topping
Mix cream cheese and sugar on medium speed until creamed. Gently fold in cool whip. Spread over completely cooled crust sealing edges against dish sides.
Topping:
1 box raspberry Jell-O
1 box orange Jell-O
2 cups boiling water
3 cups raspberries
Dissolve Jell-O in boiling water and then stir in raspberries. Let set for 10 minutes then pour evenly over filling.
Refrigerate for at least two hours before serving.
Note: any berry and flavor Jell-O may be substituted. Black raspberries with black cherry and raspberry jell-o works well. Walnuts are a good substitute for pretzels.

Raspberries with Chocolate-Mint Sauce
1½ cup non-fat milk
2 Tbs. low-fat margarine
½ cup unsweetened cocoa powder
½ cup sugar
½ cup fresh mint leaves, finely chopped
1 tsp. vanilla extract
4 cups fresh raspberries
Scald milk in small saucepan. In a separate saucepan, melt margarine and add cocoa powder stirring constantly with whisk. Add milk, sugar and mint and continue stirring until mixture thickens, around five minutes. Remove from heat and add vanilla. Allow to cool. Place ½ cup of fresh raspberries in dessert dishes and top with chocolate-mint sauce.

Raspberry Honey Butter
1/3 cup honey
½ cup butter
1/3 cup fresh raspberries
3 tsp. raspberry jell-o
Combine all ingredients and mix until creamy. Place in tightly sealed container and refrigerate.

Raspberry Sauce
2 cups raspberries
½ cup sugar
1 Tbs. cold water
1 ½ tsp. cornstarch
Combine sugar and raspberries in large saucepan. Dissolve cornstarch in sold water and add to saucepan. Bring to rapid boil for three minutes, stirring constantly. Cool and refrigerate in tightly sealed container..

Berry Cobbler
Preheat oven to 350.
Melt 1 stick of butter in an 8x8 baking dish.
Mix together:
1 cup milk
1 cup flour
1 cup sugar
1 tsp. vanilla
Pour mixture into melted butter.
Add to melted butter and flour mixture:
1 cup blackberries or raspberries (sweetened if desired)
Bake mixture for 45 minutes or until knife inserted in center comes out clean.
(This was my Mammaw’s recipe. If you like more bread, increase the amount of milk-flour-sugar-vanilla mixture. This recipe can be used with any berries or fruit. Peach is great to substitute almond flavoring for the vanilla. You can increase the recipe and use a 9x13 baking dish)
